I’ve been spending the last few weeks getting to know my new daughter so there hasn’t been much time for blogging…although I have actually managed to find some time for craft/baking between visitors which has been great.
So first up I have a couple of cakes, and one recipe. My reason for making quite so many cakes in one go was to use up the content of my fruit bowl. I’m often over optimistic when it comes to buying fruit as I rarely chose to eat it (I know I’m bad).
I made a banana and pecan loaf with a couple of very brown bananas. This was a recipe I’ve never made before but would recommend 100%. It’s from the BBC Good Food website and is super easy to make and tastes fantastic.
The muffin is apple and cinnamon and I can give you the recipe as I’m going to claim it as my own (well it’s a massively adapted version of this.
Apple and Cinnamon Muffins
75g of butter
100g of soft brown sugar
225g of plain flour
3 teaspoons of baking powder
a pinch of salt
225ml of semi-skimmed milk
juice of half a lemon
1 medium apple peeled, chopped into 1cm square pieces and coated in 1-2 teaspoons of cinnamon
Preheat oven to 200 degrees centigrade (180 if you have a fan assisted oven), line a muffin tin with eight cases, set aside 8 pieces of chopped and coated apple.
Cream butter and sugar together. Sift dry ingredients together and add to mixture, add lemon juice and semi-skimmed milk and combine quickly. Stir in apple pieces.
Divide between the muffin cases and top with one square of apple, sprinkle with a little additional soft brown sugar. Bake for approximately 30 minutes until golden brown.
Allow to cool and then eat.
My chief taster really enjoyed them, and so did the chief tasters Dad – so it was a thumbs up all round.
